Soft, washed rind, the milk coming from cows grazing between 1000 and 1700 metres, and when not eating fresh grass, they are feed hay made from the summer pastures, – no fermented type feed is used. Its rind reveals its character. It has a slightly chalky texture , with some breakdown under the rind, and yeasty notes melt which in the mouth.
