Remeker is made on a Biodynamic farm in mid The Netherlands. Creamy, full mouth feel, with gentle high notes. With crystallisation.
At Remeker the key to the whole production chain is ‘natural’, and this is ultimately responsible for the taste of Remeker cheese. The cheese has a natural rind, which is developed by covering the maturing cheese in Ghee that is also made on the farm.
The flavour is very balanced with fine acidity, savoury butter and hazelnut notes. The paste is a deep yellow colour with a luscious texture.
The farmer/cheesemakers take pride in what they "leave out" when farming and making cheese. At De Groote Voort what they leave out are: artificial fertilisers, pesticides, dehorning, worming, pumping *, antibiotics, synthetic vitamins, food concentrates, pasteurisation, homogenisation, skimming, bactofugation, thermisation, calcium chloride, nitric acid and (industrial) refined salt.
