Montagne No. 2 Pius is a semi-hard cheese with a slight grassy floral aspect and then delicate umami high notes. The paste is quite smooth giving a buttery mouth feel. It's washed rind touches on Bergkäse style - but with much more complexity. The cows are grazing outside in the summer on the mountains in the Gantrisch regional park - a beautiful pre-ap area where the winters are quite harsh. A cheese reflective of its' excellent milk and the skill of the cheesemaker.
