Soft, white rinded cheese, the milk coming from cows grazing between 1000 and 1700 metres, and when not eating fresh grass, they are feed hay made from the summer pastures, – no fermented type feed is used. Its rind reveals its character. Big, ripe flavours and breakdown under the rind with and runny paste, and vegetal notes melt which in the mouth.
