Milk: Unpasteurised Cow

Region: Schalchen, Zurich

Rennet: Animal

​Age: 5 months

Only available in the winter months, the only non-traditional Raclette we stock is from the dairy of the Camenzind family. "Blauer Schalk" - it's Swiss-German name, has a gentle amount of blueing in this otherwise, rich and creamy Raclette. The cheese melts beautifully, with a slight peppery flavour. 

We also use this as a table cheese as the flavour is delicious unmelted.This particular cheese is square as opposed to round. Most families have a table top grill machine for raclette and square is easy for slicing to fit the grill paddles.

For summer try it on the BBQ. Recipe here for Croûte au fromage

Swiss Raclette is intended for melting over potatoes, lightly cooked vegetables, or on bread. Serve with cornichons, it's a delicious and warming meal.
