Willi Schmid says "...Soft, velvety paste. Slightly acidic flavour, strong and beautiful resin aromas. Soft cheese made from brown cow's milk, soft and creamy to slightly runny. Is bound in a certified fresh spruce bark. It gives the cheese its beautiful resin flavours and a slightly reddish colour."
