Bergblumenkase is a buttery and herbaceous smooth mountain cheese from Switzerland and is the absolute best in its class. With hayflowers pressed into the rind shortly after making, it is matured for 8 months and develops a dark rind. Also sometimes known as Heublumen (Hay Flower). It has delicate caramel notes and as it ages, it develops a lovely grassy, floral background. This cheese, alone on a cheeseboard with a glass of delicious white wine to accompany it, makes a stand out dessert or cheese course. Stunning.
