Gstaader Mountain is a semi-hard cheese with a biscuity & bold finish. The paste is quite smooth giving a full, buttery mouth feel. It's washed rind touches on Bergkäse style - but with much more complexity. Slight almond & caramel notes. The cows are grazing outside in the summer on the mountains surrounding the Gstaad village, and are higher pastures at the start of the summer. A cheese reflective of its' excellent milk.
