Terschelling is a semi-hard, ewes milk cheese produced by Yolanda and Gerben Bakker on their farm in the small island of Terschelling off the north of Holland. They have about 120 sheep which produce organic milk which is processed into cheese, yoghurt and ice cream.
Matured for 4-6 months and made with vegetarian rennet. Nutty, sweet, with some flavors of caramel and the addition of fenugreek. A delicious combination. Smooth texture.
