Made by a farmer/cheesemaker, this Aged Gouda is matured for 2 years and made from unpasteurised milk. It has a deep caramel, fudge like flavour that lingers. A good hard and slightly crumbly texture.
The farmer has about 120 cows and employs someone to milk the cows while he makes the cheese. All the maturation of the cheese is done on the farm. We have been working with this cheesemaker for 12 years and he continues to work to improve the cheese constantly. An excellent traditional Farmhouse Gouda.
