Gruyère Selection this month

We are happily back doing Gruyère selection, and taking photos out of train windows because it was such beautiful weather in the stunning landscape of Canton Fribourg. It is always a welcome task to have to taste and think hard about what we are looking for, how we image the flavours and paste will develop over time, and what attributes to focus on. The learning is constant and each selection day is adding to the flavour library in one’s head. Gruyère selection will never cease to be an enjoyable part of our work.
