Swiss alpine cheddar made in the Bernese Alps, above 1500m in Switzerland during the summer of 2021. Made from raw alpine milk from a small herd of cows grazing on the high altitude pastures. this is experimental for the cheesemaker and experimental for us because we matured it here in London. Tasting delicious. Noticeably softer than other cheddars, floral & delicate with some classic cheddar sharpness coming through at the end. Very limited amount.
