In the summer the cows graze on alpine pastures at over 1800m. The cows come from a cooperative of 21 different farmers in the area of the village, (with herd sizes of between 15 to 30 cows). This cooperative of farmers own the cheese dairy and employ a cheesemaker. Viamala has lightly washed rind, deep creamy, alp pasture-led flavour. Slightly savoury. Unpasteurised milk.
Viamala is matured in the village where it is made. The cooperative also produces yoghurt, butter, and a small amount of cheese for local consumption.
